Working biodynamically at the foot of the Alpilles outside Saint Remy, Hauvette farms a small jewel box estate of limestone rich vineyards that produce wines of remarkable precision and depth. Cornaline is her structured cuvee: roughly 50% Grenache, 30% Syrah, 20% Cabernet Sauvignon, fermented in wood, then aged for years in large foudre with virtually no added sulfur. The
