The clear sake is separated from the fermenting rice lees by putting it into canvas bags and allowing the sake to drip out overnight (as opposed to pressing it)
dry with soft tannins
with high ripeness and some balsamic and medicinal notes
Edges of hop bitterness set a lovely accent
The structure is omnipresent here with an oaky feel at the edges and a spicy touch as well
Francois Seconde Grand Cru Brut Rose, Champagne, France NV Weingut Joh. Jos. Christoffel Erben The clear sake is separatedDisgorged in June 2018, the NV Brut Grand Cru Ros bursts from the glass with an inviting bouquet of rose petals, Griotte cherries, red apples and orange rind. On the palate, its medium to full bodied, broad and fleshy, with a ripe core of fruit, a youthfully frothy mousse and succulent acids, concluding with an expansive finish. This is a charming, fruit driven ros thats already showing well and might well support a somewhat lower dosage. Wine Advocate
